IMPORTANT: Any allergies must be reported at the time of registration. We will do what we can to accommodate this, but in some cases it is unfortunately not possible.

NOTE: The workshop will be accredited by the Italian National Register of Expert in Honey Sensory; this activity will enable members to hold their membership status for year 2026. Members of the Register will have priority in participation (up to 5 people by May 3rd)

2nd OCTOBER

9 o’clock Registration of participants

9.20 – 12 Honey sensory training workshop

(Lead by BeeSources – Raffaele Dall’Olio )

  • Guided tasting of single origin honeys
  • Descriptive exercises

12 – 13 Lunch

13,30 - 18,30 COOKING WITH HONEY

  • Fresh Italian pasta with traditional rolling pin (Lead by Mai sazia - Laura Nanni )

    We’ll prepare Tortelloni and Ravioli, two traditional pasta shape, but we’ll revisit the recipes in order to use honey as an ingredient for fillings or dressings.

  • Preparation of typical italian dessert revisited with honey.

After the course, we’ll taste our own production!

3TH OCTOBER

9 - 13.30 COOKING WITH HONEY

(Lead by Wellness Gourmet – Andrea Tibaldi and Laura Nanni

  • Preparation of potatoes gnocchi with honey;
  • Preparation of ossobuco alla milanese with honey and "gremolada"
  • Preparation of typical italian dessert revisited with honey.
